Black Garlic Aioli Recipe

Black garlic aioli is a rich and flavorful condiment that combines the sweet and earthy notes of black garlic with the creaminess of traditional aioli. It’s a perfect accompaniment for roasted vegetables, grilled meats, sandwiches, and more. Here’s a simple recipe to make black garlic aioli:

 

Ingredients:

  • 6 cloves of black garlic
  • 1/2 cup mayonnaise
  • 1 tablespoon Dijon mustard
  • 1 tablespoon lemon juice
  • Salt and pepper to taste

 

Optional: a pinch of cayenne pepper or smoked paprika for a bit of heat and smokiness (adjust to your preference)

 

Instructions:

 

  • Prepare the Black Garlic: Take the 6 cloves of black garlic and mash them into a smooth paste using a fork or the back of a spoon. Black garlic should be very soft and easy to mash.
  • Combine Ingredients: In a bowl, combine the mashed black garlic, mayonnaise, Dijon mustard, and lemon juice. Mix everything together until you achieve a smooth and well-incorporated consistency.
  • Season: Taste the aioli and season it with salt and pepper according to your preference. If you want to add some heat and smokiness, you can also add a pinch of cayenne pepper or smoked paprika at this point.
  • Chill: Cover the bowl with plastic wrap or transfer the black garlic aioli to an airtight container. Refrigerate for at least 30 minutes to allow the flavours to meld together. Chilling also helps thicken the aioli slightly.
  • Serve: Once chilled, black garlic aioli is ready to serve. Use it as a dipping sauce for fries, a spread for sandwiches, a topping for grilled vegetables, or as a flavourful accompaniment to a variety of dishes.
  • Storage: Store any leftover black garlic aioli in the refrigerator. It should remain fresh for several days to a week, depending on the freshness of your ingredients.
